Flank Steak is a great thing to keep on hand. I always have one marinating in the fridge. Cooked, it will keep for several days. Just slice it fresh as you are ready to use it.

Flank Steak Marinade
  1. 1/4 cup Olive Oil
  2. 2 tablespoons dijon mustard
  3. 1 tablespoon hot horseradish
  4. 2 tablespoons hot sauce
  5. 1/4 cup white balsamic vinegar
  6. 1/4 cup honey
  7. 1/4 cup bourbon
Marinating the Steak
  1. Prepare the marinade in a mixing bowl as directed, and cover flank steak (2-3 pound steak will do) and cover tightly and refrigerate for at least 24 hours. Preferably make ahead of time and refrigerate 2-3 days to tenderize the meat well, remember this is a tough cut of meat, the acid in the marinade will help to break down connective tissues.
Grilling the Steak
  1. Start with a hot grill, flame, however you wish to grill your steak. All you really need are 5 minutes per side, rotate 45 degrees half way per side, for "X" shaped grilling marks. Sear well, and let rest another 5 minutes until the steak stops cooking.
Cutting the Steak
  1. Using a sharp honed knife, you want to cut against the grain of the flash, cutting with the blade angled with a very deep angle, giving you small strips of steak.

LOVED this. Made just as written, mataeirnd maybe 2 hours, out on counter another 30 minutes before grilling. Delicious. Will have to take out the honey for the Whole30, hope it’s still good!! Thanks for the recommendation, had awesome yellow and green beans sauteed in my cast iron skillet, and a 1 lb heirloom tomato with evoo and s&p for a salad (Old German, some of the best tomatoes I’ve ever grown). Yum!
